What’s For Dinner? – Chorizo Rice


I am not a housewife but I might have to consider to be one. Do you have it? Everyday considering ‘What to eat tonight’? That’s why cooking shows are always helpful. Here is Chorizo rice which is inspired by Spicy Sausage Rice from Gordon Ramsay.

Chorizo Rice

INGREDIENTS (serves 2)

Olive oil, for frying
1 red onion, sliced
1 red paprika, deseeded and chopped
2 garlic cloves, finely sliced
180gr Spanish Chorizo (you could use other different sausages)
1  tsp smoked paprika powder
150 long-grain rice
½ glass white wine
500ml chicken bouillon
4 spring onions, trimmed and chopped
1 tomato, chopped
Small bunch of flat leaf parsley, roughly chopped

HOW TO MAKE IT

  1. Add one tsp of olive oil into a hot pan and  fry the onion for 2 minutes. Add garlics and paprika then stir fry them for another 2 minutes.
  2. Tear the skin of the Chorizo, cut to 2cm pieces and crumble them into the pan with onion, garlics and paprika till coloured. Add smoked paprika powder and mix. Season to taste.
  3. Add the rice and stir well to mix throughly and it can absorb all the flavour. Pour in the wine and deglaze the pan. Add the bouillon and bring it to a simmer (over a medium heat). Cook for 15-20 minutes that the rice becomes tender and the liquid almost entirely absorbed.
  4. Remove from the heat, gently fold in spring onions, tomatoes and parsley and serve.

TASTE

The flavour of the Chorizo folds over the rice and it tastes amazing. It is a bit like Paella but less intense. My version of Spicy Sausage Rice has less sausage, more vegetables. Actually, I added some green peas when the rice was cooked half way. It doesn’t change the taste of the dish, it just makes me feel healthier. 😀
